Goat Cheese Rhubarb & Pear Basket

 Ingredients (Serves: 200 pieces)

17.6 White Toque Small Goat Cheese
3 Bags White Toque Feuille de Brick Dough
10 Rhubarb Stalks                        10 Bartlett Pears                          White Toque Roasted Tomatoes
Chive Flower
Honey 
Butter

 

 

Method

 
  1. Cut each feuille de brick into 8 portions.
  2. Brush each brick with butter and put in a baking cup.
  3. Peel and dice the rhubarb and sauté with butter and honey. Reserve in fridge.
  4. Peel and dice the pears and sauté with butter. Reserve in the fridge.
  5. When fruit is cold, place a small amount in the brick, then top with a slice of goat cheese.
  6. Bake at 350°F until the brick is golden brown.
  7. Decorate with a slice of roasted tomato and chive flower.
