Passion Fruit Salad
Ingredients (Serves:
4)

6 oz White Toque Artichoke Bottoms Small
6 oz White Toque Extra Fine Peas
5 oz White Toque Peeled Fava Beans
3 oz White Toque Asparagus
3 oz White Toque Mango Chunks
5 oz Any Shape of Pasta
5 oz Fresh Plum Tomatoes
3 oz Fresh Fenel
3 Branches of Fresh Cilantro
.5 oz Dried Morello Cherries
1/4 c White Toque Passion Fruit Coulis
1/8 c Maille White Wine Vinegar
1/2 c Olive Oil
1/2 c Lime Juice
Orange Peel
2 Fresh Spring Onions
Salt & Pepper (to taste)
Method |

- Slice the artichoke bottoms and sauté with olive oil. Cool Down.
- Cook the Fava beans, peas ad asparagus for two minutes and cool
down.
- Cook the pasta and cool down in cold water.
- Cut in julienne the tomatoes and fenel.
- Dice the mangos and Morello cherries.
- Blend all the vegetables above, and add the fresh cilantro chopped
finely, spring onion chopped finely and some orange peel.
- Make the vinaigrette by mixing the passion fruit coulis, olive oil,
vinegar and lime juice.
- Season the vegetables with the vinaigrette, add salt and pepper if
necessary. Place the salad in the refrigerator for 30 minutes before
serving.
