Plantains Moussaka

Ingredients (Serves: 4)

10 oz White Toque Sliced Plantains
6 oz  White Toque Grilled Eggplant
7 oz Ground Beef
12 oz Tomato Sauce
1/2 Onion
1/8 gal Milk 
3 oz All Purpose Flour
2 oz Butter 
Oregano
Garlic 
Bay Leaves  
Cayenne Pepper
Ground Nutmeg 
Ground Cinnamon
Canola Oil 
Parmesan Cheese 

Method

 
  1. Sauté the chopped onion with the beef, add the tomato sauce, garlic, oregano, bay leaves, cayenne pepper and salt. Simmer for one hour.
  2. Deep fry the plantains and pat dry..
  3. On a gratin dish, arrange a payer of plantain, then top with a layer of meat sauce. Add a payer of eggplant top with a second layer of meat sauce.
  4. Make a bechamel with melting butter on a pot, add the flour and stir well for a few minutes. Add the cold milk and cook until the bechamel comes to a boil. Season with nutmeg, cinnamon, salt & pepper.
  5. Poor the bechamel on top of the previous preparation sprinkle with parmesan cheese and bake a t 350 F for one hour.
  6. Cut in four and serve with mixed greens..

TIP: Plantains can be substituted with yuca fries or potatoes.
