Farro/red rice.

Fava Beans 1 cup.

Red Roasted Tomatoes 1cup, halved.

Yellow Roasted Tomatoes 1 cup, halved.

Diced Artichoke 1 cup, roasted.

French peas 1 cup.

Diced mango 2 cups.

Dijon mustard, to taste.

Baby spinach: 2 cups

Chopped Parsley: 1/2 cup

Cumin: 1tbsp

Chinese five spice: 1 1/2 tbsp

  • 1. Roast oil coated artichokes in 400°F oven for about 8-9 min. Mix rice with the rest of the vegetables and spices.
  • 2. If serving cold add dijon vinaigrette till desired acidity.
  • 3. If serving warm melt 1 tbsp of butter per serving and lightly sautee.
