Club Sandwich with Sponge Sheet

Sponge Sheet Plain
Mayonnaise
Romaine lettuce leaves
Tomatoes
Salt and freshly ground black pepper
Roasted turkey or chicken pieces
• Cut the lettuce leaves in half crosswise and form into 8 neat stacks.
• On a clean work surface, arrange 3 sponges sheet in a row. Spread 1 tablespoon mayonnaise over 1 side of each sponge sheet slice. Place a lettuce stack on top of the first sponge sheet slice, top with 2 tomato slices, and season with salt and pepper, to taste. Place turkey or chicken pieces over the tomatoes. Season the turkey with salt and pepper, to taste. Repeat with the second sponge sheet slice. Carefully place the second layered sponge sheet slice on top of the first layered sponge sheet, turkey side-up. Cover with the third sponge sheet slice, mayonnaise side-down. Using a serrated knife cut the sponge sheet, diagonally, into triangular pieces.
• Piercing them with picks and serve.
