Grilled Vegetable Sandwich with Prosciutto

1 WT Ciabatta Bread 6"

1 tsp WT Whole Grain Mustard

1 WT Grilled Eggplant

6 WT Roasted Tomatoes

Balsamic Glaze

3 Fresh Basil leaves

3 Prosciutto slices

1 tsp Basil Pesto

  • 1. Preheat oven to 425ºF
  • 2. Bake ciabatta for 3-4 minutes. Slice lenthwise.
  • 3. Spread whole grain mustard on the bottom slice.
  • 4. Add eggplant and drizzle with balsamic glaze.
  • 5. Place roasted tomatoes on top of eggplant.
  • 6. Add fresh basil.
  • 7. Place prosciutto on basil.
  • 8. Spread pesto on the top bread slice and place on the sandwich.
