Frozen products packaged under our White Toque brand represent about 80% of our sales. We strive to find the highest quality ingredients and aim to bring totally unique frozen items to the US & Canada markets. Through constant communication and long-term partnerships with major manufacturers and production facilities in Europe, we are able to guarantee strong standards of quality for all of our products and adapt to US market specificities.

Founded in 1992 by CEO Didier Amiel and COO Richard Lemee, White Toque is the result of a merger between the export operations of France Mediation USA Inc., a sales agency for French food and wine companies, and Toque d’Alsace SA, a French manufacturer of frozen starters and appetizers. Since then, the company has grown throughout the years by significantly expanding our product lineup and national footprint through new offices and distribution channels across the US and Canada.

We take quality seriously. All of our products come from facilities that meet the highest international standards, including GFSI certifications and third-party audits. Our Paris-based QA/QC team works closely with suppliers to ensure food safety, traceability, and consistent product performance. This allows our customers to rely on dependable quality and consistency, so they can focus on delivering exceptional dining experiences.

In addition to our reputation for imported European goods, we’ve also expanded our footprint here at home through our sister companies, Hudson Foods Venture and Ocean Pearl Smokehouse .

 

These ventures reflect our commitment to quality and innovation by bringing production of our charcuterie and smoked salmon lines stateside. Hudson Foods Venture and Ocean Pearl Smokehouse both serve as a means of artisanal production, with the capability to experiment and cater for individual clients, creating the exact solution you need.

Logistics & warehousing

Our logistics capabilities include distribution centers in NJ, FL, TX, CA, CAN, NY, and more, allowing us to effectively service our North American customer base. Our Secaucus NJ facility operates a 35,000 sq. ft. warehouse with a 3,000-pallet freezer and a temperature-controlled 5,000 sq. ft. dock. Our Hayward CA facility is partnered with US Cold Storage and offers our West Coast customers the same services as in the East.

Specific logistics services include weekly departures from the French port of Le Havre to New York, weekly frozen shuttles between NJ and CA, and bi-monthly transfers to the Canadian East Coast. We also engage in third-party warehousing in Florida, the Midwest, and the Northwest Territories.

Research & Development

At White Toque, we work very closely with our customers to adapt our products to their recipes and menu development. Our team can provide recommendations on how to use White Toque products in existing and new applications, integrating your targeted food costs, labor constraints and yields to adapt our offerings. Our group of hired Chef-Consultants are very aware of White Toque capacities and can develop recipes or offer ingredients to complement existing ones. Our White Toque vendors also have their own R&D departments to develop products adapted to the US market and following our customer requirements. Workshops abroad are also available.
