Grilled Cheese with Caramelized Onions and Honey Mustard

Caramelized Onions

2 yellow onions (about 250g)
1 tablespoon olive oil
1 knob of butter
1 teaspoon honey

Grilled Cheese

4 slices of bread
20 grams salted butter
2 tablespoons Clovis honey mustard
4 slices of Comté or Gouda cheese
2 small handfuls of arugula (rocket)
A drizzle of olive oil
Fresh thyme
Slice the onion thinly.
Heat a skillet over high heat with olive oil.
Add the sliced onion, honey, and sauté for about ten minutes until the onions are soft and caramelized. Add a little water if necessary.
Assemble the Grilled Cheese:

Butter the inner sides of each bread slice.
On two of the slices, on the buttered side, layer the Comté or Gouda cheese, honey mustard, then the caramelized onions and arugula. Season with pepper and close with the remaining two bread slices (buttered side facing inward).
Heat a skillet with a tablespoon of oil. Place your grilled cheese sandwiches in the skillet and grill over medium-high heat for 2-3 minutes on each side, or until they reach the desired color.
Sprinkle some fresh thyme on top and enjoy!
