PREPARATION
- Cut the onion and cook it with ghee or neutral oil on a pan. Add garlic and ginger with the garam masala. Add the red lentils and mix.
- Add the coconut milk and the peeled tomatoes previously cut on large cubes.
- Cover the pan and let it stew for around 20 min. Mix regularly.
- Cook the rice in parallel.
- In the end, add the baby spinach and let them cook for 5 minutes. Season to taste.
- Serve with rice and slices of lemon.
