Our New Meat Production Project

We recently had the pleasure of touring guests through our new meat production facility, Hudson Foods Venture.

Located in the heart of Hudson Valley, New York, Hudson Foods Venture is a brand new meat production plant opened in 2024 that specializes in French charcuterie products. With acclaimed French chef Frederic Fischer at the helm, the plant focuses on artisanal production of pâtés, saucisson, ham, and pre-made French ready meals through locally sourced materials.

 

Featuring state of the art machinery and a fast and flexible process, the plant offers the ability for client-specific recipes and production runs, on top of it’s line of curated charcuterie products. Hudson Foods Venture products are produced under the Le Bec Fin brand, a locally known brand name in NJ and NY that has been around since the 90s. Our guests were treated to a guide through the production facility, including ingredient storage, large-format ovens, slicers, packaging equipment, meat curing room, and more. At the end of the guide, the head chef at the plant prepared a charcuterie board with a lineup of the plant’s offerings, including it’s signature product: Jambon de Paris.

 

Through this and other projects, White Toque aims to bring production stateside without sacrificing genuine French recipes and flavor.
