Fried Noodles with Mushrooms

PREPARATION
- Rehydrate the forest garnish with cold water.
- Boil for 7 minutes, then drain and rinse the mushrooms under cold water.
- In a bowl, mix 3 tablespoons of soy sauce, 3 tablespoons of Phù Qhuôc fish sauce, 2 teaspoons of sugar, 1 tablespoon of oil and 1 tablespoon of sesame seeds.
- Slice the onions and chop the garlic.
- Cook the noodles in boiling water for 3 minutes then drain.
- In a wok heat a tablespoon of oil and cook the garlic, onions, ginger.
- Add the mushrooms and cook for 5 minutes.
- Add the sauce and bring to a boil for ten seconds to deglaze.
- Add the Chinese noodles and toss everything together until the sauce has coated the noodles.
- Adjust seasoning if needed.
