Fried Noodles with Mushrooms

PREPARATION

  1. Rehydrate the forest garnish with cold water.
  2. Boil for 7 minutes, then drain and rinse the mushrooms under cold water.
  3. In a bowl, mix 3 tablespoons of soy sauce, 3 tablespoons of Phù Qhuôc fish sauce, 2 teaspoons of sugar, 1 tablespoon of oil and 1 tablespoon of sesame seeds.
  4. Slice the onions and chop the garlic.
  5. Cook the noodles in boiling water for 3 minutes then drain.
  6. In a wok heat a tablespoon of oil and cook the garlic, onions, ginger.
  7. Add the mushrooms and cook for 5 minutes.
  8. Add the sauce and bring to a boil for ten seconds to deglaze.
  9. Add the Chinese noodles and toss everything together until the sauce has coated the noodles.
  10. Adjust seasoning if needed.
